SPAGHETTI BOLOGNESE

Serves 1

Grated Cheddar cheese can be used instead of Parmesan, but a drum of Parmesan keeps for ages in the fridge and goes a long way.

Takes 25–55 minutes

Traditional Bolognese Sauce (see page 125) or Quick Bolognese Sauce (see page 127)

75 g/3 oz spaghetti or 1 cup pasta shells, bows, etc

½ tsp cooking oil

2 tsp Parmesan cheese or 25 g/1 oz grated Cheddar cheese

Prepare the Bolognese Sauce.

Cook the spaghetti or chosen pasta in a pan of boiling water with ½ tsp cooking oil for 10–12 minutes. (If you want to have long spaghetti, stand the bundle of spaghetti in the boiling water and, as it softens, coil it round into the water without breaking.)

Drain the spaghetti and put it onto a hot plate. Pour the sauce into the centre of the spaghetti and sprinkle the cheese on the top. Serve at once.
